Even if the weather isn’t cooperating—is this snow an early April Fool’s joke?!—we’re still craving seasonal staples like asparagus and ramps (we love you, squash, but you're bringing us down). As visions of colorful farmers markets dance in our heads, we’re dreaming of making these three dishes:
Artichokes are at the heart of this light yet satiating recipe that pairs asparagus tips and other seasonal greens with a vibrant pesto sauce. Serve it as a side or as a main course with a loaf of crusty bread.
Culinary legend has it that you can order this pasta at Le Cirque—one of NYC’s most famous restaurants—even though it isn’t on the menu. To make it at home, you’ll need fresh broccoli, mushrooms, peas, zucchini and asparagus tips (again!) as well as the stomach for a rich alfredo sauce.
If lamb doesn’t say spring, we don’t know what does. We’re partial to making these meatballs, which lend themselves to lighter meals. Rolled on the smaller side, they can be served as an appetizer, atop a water cracker with a dab of mint sauce. Serve larger meatballs with an arugula salad and some hearty garlic toast.
